Spice Breakfast Bar

Ingredients

  • ¾ cup all-purpose flour

  • ½ cup toasted oat flour

  • ¼ cup almond flour

  • 1 ½ teaspoons baking powder

  • ¼ teaspoon salt

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon ground nutmeg

  • ½ cup butter, softened

  • ¼ cup honey

  • 2 large eggs

  • 1/4 cup milk

  • 1 teaspoon vanilla extract

  • 1/2 cup chopped almonds

  • 1/2 cup fresh or frozen blueberries

  • 2 tablespoons almond butter (for swirls)

Direction 

    1. Preheat the oven to 350°F. Grease and line an 8-inch square baking pan with a thick strip of parchment paper across the pan.

    2. Combine flour, almond flour, toasted oat flour, baking powder, salt, and spices. Mix and set aside.

    3. In a large bowl, mix together the butter and honey until fully incorporated. Add in eggs, milk, and vanilla extract; mix well.

    4. Fold in chopped almonds and fresh or frozen blueberries until evenly distributed. Do not overmix or the batter will turn blue from the berries.

    5. Pour the batter into the baking dish and spread until even in the pan. Add a dollop of almond butter to the top, using a knife or skewer to drag the almond butter in a decorative pattern to create swirls. (optional)

    6. Place in the oven and bake for 30 minutes, or until a toothpick comes out clean.

    7. Allow to cool completely in the pan, then cut into 8 bars. Serve with Greek yogurt and more fruit, for improved hosting.

Toasted Oat Flour

Ingredients

  • 4 cups rolled oats

Directions

    1. Preheat the oven to 400°F and spread oats in an even layer on a cookie sheet.

    2. Once the oven is preheated, place the oats in and, at the 4-minute mark, take them out and stir to ensure even toasting.

    3. Return the oats to the oven to toast for 3 more minutes, checking every minute to make sure they don't burn.

    4. Once browned but not blackened, let the oats cool, or place them in a mixing bowl to cool more quickly.

    5. Once completely cooled, put the oats in a blender and blend for 1 minute until powdered. Do not over blend, as the mixture will turn into oat butter. Place in a container store with other flours. A great gluten free flour, or use as your own quick oats in the morning.
