3 Large Eggs

1 Bell Peppers

¼ an Onion

½ cup cherry Tomato

1 ½ tablespoon Olive oil

1 tablespoons Ricotta
-
2 Sprigs Fresh thyme
-
½ teaspoon Salt

½ teaspoon Peper

Directions

Dice onion or any other vegetable, or slice peppers and tomatoes, keeping everything separate.

Heat a pan for almost a minute. Add oil and wait until it’s hot, about a minute, then add the onion and a pinch of salt.

Once the onion is browned, add the peppers and let them cook for two minutes.

Crack eggs in a separate bowl. Add salt and pepper to taste. Whisk until the mixture has an even color.

Lay the tomatoes down in the pan, cook for one minute, then drizzle a little more oil into the pan.

Pour in the eggs and top with a lid. Cook for three minutes, then sprinkle with chives.

Finish under the broiler for one to two minutes. Serve with fruit or bread for a perfect dining experience.
