Frittata For Two

Frittata for two

  • 3 Large Eggs  

  • 1 Bell Peppers 

  • ¼ an Onion 

  • ½ cup cherry Tomato 

  • 1 ½ tablespoon Olive oil 

  • 1 tablespoons Ricotta 

  • 2 Sprigs Fresh thyme 

  • ½ teaspoon Salt 

  • ½ teaspoon Peper 

  •  

Directions 

  1. Dice onion or any other vegetable, or slice peppers and tomatoes, keeping everything separate.

  2. Heat a pan for almost a minute. Add oil and wait until it’s hot, about a minute, then add the onion and a pinch of salt.

  3. Once the onion is browned, add the peppers and let them cook for two minutes.

  4. Crack eggs in a separate bowl. Add salt and pepper to taste. Whisk until the mixture has an even color.

  5. Lay the tomatoes down in the pan, cook for one minute, then drizzle a little more oil into the pan.

  6. Pour in the eggs and top with a lid. Cook for three minutes, then sprinkle with chives. 

  7. Finish under the broiler for one to two minutes. Serve with fruit or bread for a perfect dining experience.
